Gobi paratha is a beloved North Indian flatbread stuffed with spiced cauliflower filling. The whole wheat dough is rolled out, filled with seasoned, grated cauliflower, sealed, and shallow-fried on a griddle with ghee until golden and crispy. The garam masala, cumin, and kasuri methi create a delicious filling that is perfect for the flaky paratha.

½ to ¾ cupWater (as required)
1 tspOil
3 tbspGhee (for cooking)
450 gmCauliflower florets (cleaned and patted dry)
1-2 Green chillies (chopped) (optional)
3-4 tbspCoriander leaves (pat dry & finely chopped)
½ to ¾ tspSalt (adjust to taste)
¼ tspTurmeric (optional)
¾ tspKashmiri red chilli powder (adjust to taste)
¾ to 1 tspGaram masala
¾ tspRoasted cumin powder
¼ tspDried ginger powder (optional)
1 tsp or ½ to ¾Chaat masala or amchur (dried mango powder)
½ tbspKasuri methi (dried fenugreek leaves)
¼ tspAjwain (carom seeds, slightly crushed)

Step 1: Preparing the cauliflower filling

Add cauliflower florets to a food processor with a medium grater attachment and grate them to a rice-like consistency. Alternatively, use a grater. If the grated cauliflower is too moist, spread it on a kitchen towel and pat it dry.
