Rumali roti is a thin and soft flatbread, which can be folded like a handkerchief and is served in almost every Indian restaurant. These rotis have many versions and are known by different names in different countries. Like in Pakistan, it is called lamboo roti, due to the flatbread’s ability to stretch, while the Caribbean version is known as dosti roti because it is made by cooking two rotis together. Rumali roti is made with refined flour, which lacks fibre and can cause a blood sugar spike. However, using Aashirvaad Chakki Khapli Atta, rich in bran and germ content, makes this classic preparation fibre-rich and protein-rich. This rumali roti is nutty and earthy in flavour and does not compromise on nutrition.

Description - Step 1

Step 1: Knead The Khapli Dough

In a large bowl, add khapli atta and salt and mix it well. Then add ghee or oil and mix it into the flour until it is evenly distributed. Now add milk or curd, then add water little by little and start combining all ingredients to knead a dough. Knead continuously for around 9-10 minutes to form a smooth and soft dough. When it is done, cover it with a damp cloth and let it rest for 30-45 minutes at room temperature. This resting helps to prevent tearing while rolling.
