For Durga Puja 2026, Roshogollar Payesh is a perfect dessert featuring soft rosogolla in continuously cooked, sweetened milk. The creamy payesh base adds a festive touch, and the rosogolla makes it a classic Bengali sweet. Unlike kheer, this recipe includes spongy cheese balls steeped in sweetened milk. Making this payesh involves slow cooking of the milk. Full-fat milk is cooked on a low flame till it takes on a thick consistency, with the addition of saffron and cardamom to give it flavour. After the cooking is done, rosogolla is added to the sweetened milk so that it can absorb sweetness from the milk without losing its structure. The amount of sugar required is moderate, as the rosogolla already contains sugar syrup inside it. It should be thick so that the liquid adds flavour to the rosogolla too. While the nuts add crunchiness, rose water gives floral fragrance to the dish. This payesh recipe is best suited for a Bengali festive meal, and it can be served cold.
