A sambar recipe is a speciality of South India, which is made with a unique blend of flavours and spices. One such recipe is Udupi-Style Sambar, which has a tangy, spiced and lightly sweet taste. This lentil-based vegetable stew gets its sourness from tamarind, a touch of earthiness from coconut, mild sweetness from jaggery, and a little spiciness from chillies. This sambar recipe originates from Udupi cuisine in Karnataka. Most of this cuisine is satvik, with no onion or garlic.
