Ras Malai with Roses is an aromatic flower addition to the traditional Bengali dessert where soft chenna patties are immersed in sweetened creamy milk with roses. ‘Ras’ means juice and ‘Malai’ means cream and it is quite self-explanatory. The inclusion of rose essence transforms the traditional ras malai into a scented dessert, with the sweet scent of rose complimenting the mildly sweet taste of the milk and spongy texture of chenna. This version of ras malai is made for two persons only and can be prepared during festive occasions like Diwali or Eid.

Step 1: Making The Chenna

Boil 500 ml milk in a thick bottom pan over medium flame. Cool it for 5 minutes after removing from flame, add vinegar/lemon juice and mix until milk gets curdled. Then add the ice cubes and strain the mixture using muslin cloth. Wash the curds under cold water for 1-2 minutes, then squeeze the excess liquid. Hang the cloth for 25-30 minutes to make the chenna dry and crumbly.
